Lobster Rolls

lobsters
shelled

celery stalk
finely chopped

green onions
finely chopped
juice from 1/2 lemon

mayonnaise
salt & pepper to taste

brioche hot dog buns
baby gem or Boston lettuce
butter for toasting

Instructions
Chop the lobster meat into chunks (you can either leave it in chunks, or chop it finer – I prefer chunks).
Whisk together the chopped celery, lemon juice, mayonnaise, chopped green onions, salt and pepper.
Add in the lobster meat, mix to coat entirely.
Optional: melt butter in a skillet and toast the buns.
Line the inside of the buns with lettuce.
Fill generously with the lobster meat filling.
Notes
The lobster meat filling can be made ahead of time, even overnight, and kept in the fridge – perfect for stress-free hosting.
If you feel the mixture needs to be thinned out, add more lemon juice.
