Lobster Rolls

What says summer more than a lobster roll?! Okay… maybe a few things, but lobster rolls are definitely one of them!

I generally make these during peak lobster season, but I recently discovered that Costco has excellent frozen Atlantic Canadian lobster meat in brine and it is honestly an incredible alternative when lobster is no longer in season. I keep this stocked in my freezer for whenever I feel like making any fancy lobster recipe in a pinch, like these lobster rolls, or even my lobster-mascarpone risotto.

This is a great recipe for a picnic – I like to make the filling, pack it in a tupperware container, and bring the buns and lettuce. Then all you have to do is assemble the rolls on the spot and you’ve got a VERY fancy packed picnic lunch! I do this often when we are packing a lunch to take on the boat to spend a day with friends. There is no reason not to impress, even if lunch is served on paper plates!

I love using baby gem lettuce to line the buns before putting in the filling, but if you can’t find baby gem, Boston lettuce will do just fine! If you’re not taking these on a picnic, then buttering and toasting the buns is an added bonus.

Lobster Rolls

Makes 6-8 lobster rolls
Course Main Course

Ingredients
  

  • 5-6 lobsters shelled
  • 1 celery stalk finely chopped
  • 4 green onions finely chopped
  • juice from 1/2 lemon
  • 3 tbsp mayonnaise
  • salt & pepper to taste
  • 6-8 brioche hot dog buns
  • baby gem or Boston lettuce
  • butter for toasting (optional)

Instructions
 

  • Chop the lobster meat into chunks (you can either leave it in chunks, or chop it finer – I prefer chunks).
  • Whisk together the chopped celery, lemon juice, mayonnaise, chopped green onions, salt and pepper.
  • Add in the lobster meat, mix to coat entirely.
  • Optional: melt butter in a skillet and toast the buns.
  • Line the inside of the buns with lettuce.
  • Fill generously with the lobster meat filling.

Notes

  • The lobster meat filling can be made ahead of time, even overnight, and kept in the fridge – perfect for stress-free hosting.
  • If you feel the mixture needs to be thinned out, add more lemon juice.
